THANKSGIVING…
A QUICK BITE
Sometimes we become so overwhelmed with this American Holiday called “Thanksgiving”...we need to prepare, turkey, ham, peas and rice, baked macaroni and cheese, stuffing, coleslaw, candied sweet potatoes, fried fish, potato salad...are we tired yet!!!
As a kid growing up in these beautiful islands my Thanksgiving or Harvest memories are of mornings sitting in the “QUAD” surrounded by an abundance of canned goods to be given to those in need. “Bei” there was morning “dat” the sun was hot as we sang… “Morning Has Broken”. Later in the afternoon our family and friends got together to chow down at someone's house, but mostly our house.
I just remember a table filled with an abundance of color, with a touch of American and Bahamian eats...American Style Biscuits and gravy, Peas and Rice, Potato Salad, Candied Sweet Potato covered with Marshmallows, Cole Slaw, Broccoli and Carrots, Green Salads, and of course Honey Baked Ham, Stuffing, Glazed Turkey. Pound Cake, Pumpkin and Coconut Pie. Aunt Raine, Uncle Bob, and Mom prepared all these delights!!! Way too much food.
The past 18 months have been a roller coaster of fear, strength, gratefulness, emptiness, anger, love and so much more. Some may not want to even think of a moment of “thanksgiving” and I get it!!! So I thought let's look at this through a different lens with a slight twist on tradition Instead of turkey….which is a very new tradition, by the way, originally fish or venison was the protein of the day!!
To save on time and cash but not skimp on flavor, the feel of Thanksgiving or the beauty of our final dish reveal. This go-round, we are going to enjoy...

Check out these recipes and make them your own!!!! Instead of burning all that gas cooking that turkey for 2-3 hrs, sit back instead...put your feet up and grab a glass of a California Chardonnay. Oh, yea... we can also start to play that Christmas music and get in the mood to “Count Our Blessings' ' with some tunes from Mariah Carey's “All I Want For Christmas is YOU”...
